Ground Chicken Lettuce Wraps

This is one of my favorite go to recipes for when I want something healthy and fresh! It’s great for a light dinner on a summer night, or even as a snack any time!

Now, I love to cook, but….I don’t measure, so take the measurements below with a grain of salt. I also never make something exactly the same way twice. On this particular day, I grabbed every Asian sauce I had in the pantry and added a little here and there and it turned out pretty delicious! Taste as you go, and have fun! INGREDIENTS:

  • 1 lb Ground chicken
  • 1T All purpose seasoning
  • 2T Hoisin sauce
  • 1t Ponzu sauce
  • 1t Rice vinegar
  • 1/2t Sesame seed oil
  • 1T Honey
  • 1/2 Cucumber, sliced into batons
  • 1 Carrot, sliced into batons
  • 1C Red cabbage, shredded
  • 1 Head bibb lettuce
  • 1/4C Green onions, sliced
  • 1/4C Cilantro

PREPARATION:

  1. In a skillet, brown the ground chicken and add all purpose seasoning.
  2. Whisk together the hoisin, ponzu, rice vinegar, sesame seed oil, and honey and add that mixture to the chicken once browned. Simmer 2 minutes.
  3. Pull 4 leaves from the bibb lettuce. Wash thoroughly and pat dry.
  4. On each lettuce leaf, layer chicken, cucumber batons, carrot batons, red cabbage, green onions and cilantro.
  5. Roll that baby up or fold it like a taco and enjoy!
